RECIPE: LION'S MANE MUSHROOM STEAK

Lion’s Mane mushrooms are a revered gift from nature, known for their amazing health benefits and rich roots in herbal traditions that support clarity, focus, and overall wellbeing. Lion’s Mane mushrooms have a naturally meaty texture and a subtle, savoury flavour that makes them perfect for a delicious and nutritious, plant based steak. With a few simple steps - pressing, searing, and seasoning - you can bring out their full potential.

This simple, delicious recipe was inspired by a scroll through Alfie Cooks. Matt doesn’t usually doom scroll, but when he does, it’s more of a yum scroll. I know when he has redownloaded Instagram and gone for a scroll because he’ll be looking at his phone, letting out an occasional “yuuummmm”. And the next time I pick up my phone, my inbox is full of reels of recipe reels.

This recipe came from one of those days. We discovered Alfie Cooks page and, after about 8 “yuuummmms” as we watched Alfie prepare broccoli steaks, cauliflower steaks and mushroom steaks, we were inspired. We couldn’t find the exact method for the mushie steaks, so we experimented in the kitchen and created this version ourselves. It’s simple, delicious and nutritious. We hope you love it as much as we do.

Lion’s Mane Mushroom Steak

Serves 2

Time: 45mins (including marinating time)

Ingredients

  • 400g Lions Mane Mushrooms (we used 2x 200g Urban Valley Lion’s Mane)

  • 1 tsp sesame seeds, toasted

  • 1 tsp miso paste

  • 1 tsp rice wine vinegar

  • 1 tsp sriracha

  • 1 tsp sesame oil

  • 1 tsp agave (or maple syrup)

  • 1 tsp ginger, minced

  • 1 tsp garlic, minced

  • 1 lime, juiced


MAKE

  1. Prep the Mushrooms
    Gently clean the Lion’s Mane mushrooms using a dry cloth or soft brush. Avoid soaking them (they absorb water easily).

  2. Press the Mushrooms
    To enhance the texture and help them absorb flavour, press the mushrooms. Place them between two cutting boards and gently press down with some weight (like a heavy pan or cans). Let them sit for 10–15 minutes to release excess moisture.

  3. Make the Marinade
    In a small bowl, whisk together:

    • miso paste

    • rice wine vinegar

    • sriracha

    • sesame oil

    • agave

    • ginger

    • garlic

    • lime juice

  4. Marinate
    Place the mushrooms in a shallow dish or bowl and spoon the marinade over them. Let them marinate for at least 20 minutes, flipping occasionally. For deeper flavour, marinate for a few hours in the fridge.

  5. Sear the Steaks
    Heat a frypan over medium-high heat. Add a splash of high quality oil if needed. Sear the mushrooms for 3–5 minutes on each side, or until golden and crispy at the edges. Press gently with a spatula while cooking to keep that steak-like texture.

  6. Finish and Serve
    Once cooked, sprinkle with toasted sesame seeds. Serve hot with your favourite sides – we love it with roasted veggies, or a fresh salad.

TIPS

  • For extra umami: Brush on a little more marinade just before the last flip.

  • Leftovers? Slice thin and add to wraps, buddha bowls, or salads.

  • Want more heat? Add a little extra sriracha or a pinch of chilli flakes to the marinade.

This Lion’s Mane Mushroom Steak is more than just a delicious plant-based meal. It’s food as medicine. Brain-nourishing, mood-lifting, and full of earthy flavour, it’s a wonderful way to bring more intention to your meals.
